Sugarfree and low carb christmas bread
A table full of treats is, of course, part of the holiday season. Around Christmas, a Christmas bread, for example, is a real treat. Unfortunately, eating this treat full of sugars and carbohydrates is not very healthy. Fortunately, we have a nice recipe for a sugarfree and low carb Christmas bread with Steviala. This sugarfree and low carb Christmas bread with Steviala tastes at least as good and is a lot healthier!
Ingredients
Sugarfree and low carb Christmas cake
- 1 teaspoon baking soda
- 250 grams Steviala low carb almond flour
- 5 eggs
- 1 teaspoon lemon juice
- 40 grams Steviala Ery-Bronze or Steviala Ery-Pure
- 45 grams unsalted room temperature butter
- 60 grams raisins or less as desired
- 1 tablespoon Steviala Frost
- optional: 75 grams of hazelnuts or other nuts of your choice
Low carb almond paste from the fridge
- 150 grams Steviala almond flour
- 35 grams Steviala Ery-Bronze or Steviala Ery-Pure
- 1 egg
- the juice and grated zest of half a lemon
Baking supplies
- mixing bowl
- cake pan measuring 23 by 23 cm
- baking paper
Preparation
Making low carb almond paste
Mix all the above ingredients in a large bowl. Make sure the paste is just the right thickness. Sometimes it is a little too thin, but you can thicken this by adding a little almond flour. If it is too thick you can add an egg, if necessary. Then roll up the sugar free and low carb almond paste in cling film and put it in the refrigerator for a while.
Making sugar free and low carb Christmas bread
First, preheat the oven to 180 degrees. Next, in a large and high bowl, mix the almond flour, baking soda and lemon juice.
Next, add the eggs, butter and Steviala Ery-Bronze to the bowl and make a smooth mixture. You can stir it evenly with a spatula. Next, carefully add the raisins and possibly the hazelnuts or other nut mix to the mixture.
Take a cake pan and place baking paper in it. Then pour half of the mixture into the cake pan. Next, place the almond paste on top of the mixture. Also pour the other half of the mixture on top of the almond paste. Bake this delicious sugarfree Christmas bread for 40 minutes in the oven. Let cool and then sprinkle Steviala Frost on the top.
Tip
This recipe was originally made with Steviala Ery-Pure, however, this Christmas bread is much tastier with Steviala Ery-Bronze, this will give you a darker color Christmas cake.

Written by Marleen on 1-01-2023Voor de eerste keer gemaakt. De smaak was goed, maar ik vond de amandelspijs aan de droge kant en wat zwaar. Het brood zelf was ook aan de compacte kant. Wellicht de volgende keer wat meer bakpoeder/baking-soda, zodat het wat luchtiger brood wordt. Heb het wel met smaak gegeten
