We are almost approaching December 5th, so time for more Sinterklaas baking inspiration! How about this lowcarb gingerbread cake roll, for example! A delicious Sinterklaas treat! This lowcarb cake roll combines the flavours of Dutch 'kruidnoten', gingerbread spices and chocolate. A match made in heaven! The cake roll is made with eggs, Steviala almond flour and the Steviala Kristal Sweet Cinnamon for a nice sweet taste with a hint of cinnamon. In between you will find a sugarfree quark filling sweetened with the Steviala Frost. The party is complete with a swirl of Steviala Oh' Choc! chocolate topping. Of course, homemade Dutch kruidnoten can't be missing! Get all the ingredients ready, and off you go!
Ingredients
Low carb gingerbread cake roll
- 4 eggs
- 50 grams Steviala almond flour
- 30 grams Steviala Kristal Sweet Cinnamon
- 1 teaspoon baking powder
- pinch of salt
- 1 tablespoon gingerbread spices
Sugarfree Oh' Choc! quark filling
- 200 grams quark
- 100 ml whipped cream
- 30 grams Steviala Frost
- pinch of speculaaskruiden
- 5 grams vanilla extract
- 3 gelatin sheets + 15 ml whipping cream
- 50 grams Steviala Oh' Choc! chocolate topping
- 30 low carb and sugarfree Dutch kruidnoten
Sugar free topping
- 30 grams low carb and sugarfree Dutch kruidnoten
- 50 grams Steviala Dark Chocolate Melties

Preparation

For this recipe, first you're going to make the Dutch kruidnoten yourself. Follow the description of this recipe. Let the Dutch kruidnoten cool completely so they are nice and crunchy.

Then get to work on the low carb gingerbread cake roll. First, preheat the oven to 180 degrees. Then line a baking tray with baking paper. Then split 3 eggs. Beat the 3 egg whites to stiff peaks. Meanwhile, mix the almond flour, Steviala Kristal Sweet Cinnamon, baking powder, salt and gingerbread spices. Add 1 whole egg and 3 egg yolks to this and then beat to a fluffy batter. Then spoon this through the stiff egg whites without losing too much volume. Take the baking sheet and spread the cake batter on the baking paper. Grease this baking sheet well to be sure. Then place the baking sheet in the oven for 25 minutes.

Meanwhile, you can get started with the sugarfree quark filling. First mix the quark with the whipping cream, vanilla extract, Steviala Frost and gingerbread spices. Meanwhile, put the gelatin sheet in a bowl with cold water for 10 minutes. In a sauce pan, heat the cream and melt the gelatin sheets in it. Add this also to the quark layer and mix well. Finally, crumble 30 Dutch kruidnoten and spoon this into the quark filling. Then you can finish this lowcarb gingerbread cake roll.

Next, spread the quark layer over the cake roll. Do this while the cake roll is still slightly warm, that way it won't break. Also, spread a few tablespoons of Steviala Oh' Choc! chocolate topping.
