This low carb shortbread is truly delightful! Traditional shortbread is made mainly with real butter and is usually baked in a cake mold with a diameter of 20-24 centimeters. The cake can only be called shortbread when real butter is used. Normally, shortbread contains a significant amount of sugar, but this low carb shortbread is sugar-free. I want to thank Anne Verhoeve for this delicious recipe! I will definitely make this low carb shortbread more often.
Sometimes homemade shortbread can be hard or dry, but that is certainly not the case with this recipe! This shortbread is wonderfully moist on the inside and still lightly crispy on the outside. Super delicious! And it's also very easy to make! Don't be alarmed by the amount of butter; that's what makes this butter cake so delicious. And using good quality real butter is crucial for the final taste!
For this shortbread, you don't need many ingredients. This shortbread contains a total of approximately 21 grams of carbohydrates. This takes into account the use of coconut flour from Steviala, which is very low in carbohydrates. Steviala coconut flour is a good alternative to replace wheat flour and is also a source of fiber. Therefore, this recipe fits perfectly into a low-carb and sugar-free diet!
Ingredients
Low carb butter cake
- 4 eggs
- 150 grams Steviala almond flour
- 50 grams Steviala coconut flour
- 150 grams room-temperature butter
- 100 ml Greek yogurt
- 1 teaspoon vanilla extract
- 50 grams Steviala Kristal Sweet
- a pinch of salt
Baking supplies

- whisk or electric hand mixer
- round 24 cm baking tin
Preparation
Making low carb shortbread
Preheat the oven to 180°C. Take a large, high bowl and then combine all the ingredients together. Mix well until smooth. Pour the mixture into a round 24 cm baking tin. Bake the low carb shortbread for 55 minutes in the oven. Remove the low carb shortbread and let it cool in the baking tin. Take a piece and enjoy this delicious butter cake!
